Grilled Peaches with Tajin
Peaches - halved and pitted
Tajin or chile powder
Vanilla ice cream
Butter flavored non-stick cooking spray or 1 tablespoon, melted butter
Cut the peaches in half, remove and discard the pits. Spray the peaches all over with the cooking spray.
Grill the peaches over direct medium heat, with the lid closed as much as possible, until grill marks are clearly visible and the peaches are soft, 8 to 10 minutes, turning once.
When peaches are cool enough to handle, cube into 1” pieces.
Layer each serving bowl with one scoop of ice cream, then some peach cubes, topped with a generous sprinkle of Tajin or chile powder. Top with one tablespoon honey. Serve immediately.
