Central Som Tum 

1T dried shrimp

1 oz palm sugar

¼ t water

1 key lime in wedges

1T  key lime juice

1T fish sauce

1T tamarind water

4 oz green papaya

3 oz cherry tomato

2T roasted chopped peanut

Heat a dry pan and toast shrimp.

Pound 1T palm sugar, chiles, and garlic to chunks.

Add 3 lime wedges and pound lightly. 

Bruise longbean. 

Add lime juice, fish sauce, tamarind water and papaya. 

Bruise lightly and toss well.
