Jalapeño Bacon Deviled Eggs

Ingredients

6 hard boiled eggs, peeled

½ cup mayonnaise

¾ tsp rice vinegar

½ tsp ground mustard

¼ tsp granulated sugar

1 jalapeño, seeds and ribs removed, finely chopped

3 pieces bacon, cooked crisp and chopped

Directions

Slice the hard boiled eggs in half lengthwise. Remove the yolks and put them in a large plastic zipper bag. Reserve the clean whites to be filled later.  

To bag, add the mayonnaise, vinegar, ground mustard, sugar and jalapeño. Seal the bag tightly and use your hands to mash all of the ingredients together. (Using a bag saves a step and time in cleanup!)

Once the filling is well mixed and there are no large chunks, press the filling to one corner and snip off the tip w scissors to create a piping bag.

Fill each egg hole w the yolk mixture by gently squeezing the bag.

Top with crumbled chopped bacon.

Sprinkle paprika on each egg for a finished look.

Chill until ready to serve!
