Winter Citrus Fennel Salad

  • 4 servings
  • 1/4 cup halved and very thinly sliced red onion
  • ¼ cup orange juice
  • 2 navel oranges or blood oranges
  • 1 fennel bulb, halved lengthwise, cored, very thinly sliced crosswise
  • 16 small fresh mint or basil leaves, torn in half
  • 3 tablespoons extra-virgin olive oil
  • ¼ cup good olives
  • ½ tsp salt
  • ½ tsp black pepper

Soak sliced red onion in orange juice for 5 minutes to mellow the flavor.  Cut peel and pith from oranges. Slice into thin rounds.  Drain onion of orange juice.  Toss orange rounds, fennel, onion, mint or basil, and oil in large bowl to coat. Season salad with salt and pepper. Transfer salad to platter. Garnish with olives and serve immediately.
