Winter Citrus Fennel Salad
Soak sliced red onion in orange juice for 5 minutes to mellow the flavor. Cut peel and pith from oranges. Slice into thin rounds. Drain onion of orange juice. Toss orange rounds, fennel, onion, mint or basil, and oil in large bowl to coat. Season salad with salt and pepper. Transfer salad to platter. Garnish with olives and serve immediately.
