Yield 12-14 each
1 lb. ground turkey
1 lb. ground beef
1 Tbsp. olive oil
½ C. onions, small dice
½ C. celery small dice
1 Tbsp. garlic minced
½ C. quinoa flakes
½ C. green or black olives, pitted and chopped
1 ea. Egg
1 tsp. Worcester shire
1 tsp. deli style mustard or horseradish mustard
Heat oven to 375°F
Heat the olive oil in a large sauté pan over medium high heat.
Add the onions and celery, sweat for 3-5 minutes or until translucent
Add the garlic and sweat for an additional 1-2 minutes
Remove from the heat and allow to cool for 5 minutes
Add all the ingredients to a food processor
Pulse until incorporated.
Portion the snacks into 2.5-2.75 ounces each
Place on a sheet tray with a rack
Bake in the oven for 15-20 minutes
Enjoy 1-2 through the day for a snack alone or pair it with mustard, or fresh vegetables.
Change it up with different ground meats. Try buffalo, lamb, ostrich, each will bring a different consistency and flavor.
