Brie Bites


1 - 8-ounce wheel Brie

2 - 1.9-ounce packages mini phyllo shells (about 30)

Various topping - Suggestions: Jams, jellies, marmalades, chutney, sliced cornichons, pickled fennel, balsamic vinegar


1. Set up grill for indirect medium heat. Set cooking grate in place, cover gill and allow to preheat for 5 minutes.

2. Cut the brie into 30 small cubes. Place a cube into each of the phyllo shells. Place the filled shells on an aluminum sheet and cook indirect for 5 minutes, until the cheese is melted.  Remove from the grill.

3. Top each phyllo bite with a topping of your choice.  Some might be sweet, some might be savory.  This is your chance to be creative.  There are no wrong choices.

INSIDE TIP: To make inside, on step 1, preheat the oven to 350°.  On step 3, use a cookie sheet. ?
