NO BAKE PALEO STRAWBERRY "CHEESECAKE" (adapted from Paleo Grubs)
For The Crust
1 cup pecans
1 cup almonds
6 pitted Medjool dates
2 tbsp coconut flakes
Pinch of salt
For The Filling
3 cups cashews, soaked overnight
1/3 cup coconut oil, melted
1/4 cup lemon juice
1/2 cup honey
1 tsp vanilla extract
1/4 tsp salt
2 cups strawberries
5 cups fresh strawberries, sliced to place on top
1 Soak dates for 10 minutes. Rinse and set aside.
2 For crust, prepare a 9-inch springform pan and spray with coconut oil
spray. Process pecans and almonds in a processor and pulse until finely
ground. Add the dates, coconut flakes, and salt and blend until combined.
Press the mixture into an even layer in the bottom of the pan, slightly
going up the sides. Chill in freezer.
3 For filling, place the soaked cashews (drained and rinsed), coconut oil,
lemon juice, honey, vanilla, and salt in a food processor and blend until it
reaches a smooth, batter-like consistency. Add the 2 cups of strawberries
and blend until smooth.
4 Pour the strawberry filling on top of the chilled crust. Place in the
freezer for at least two hours to harden before serving.
