Basil & Cannellini Hummus
2 cups cooked cannellini beans
3 Tb water
1 garlic clove
1/3 c tahini
1/4 tsp sriracha or other hot sauce
1/4 tsp salt
1/4 c basil leaves loosely packed
In a blender or food processor blend beans on low until mostly mushed up (technical term… stay with me people). Add 1 TB of water at a time and blend until creamy and emulsified, scraping down the sides with a rubber spatula. Add garlic, salt, the juice of the lemons, basil and hot sauce. Blend until creamy. Taste to see if it needs more salt or lemon. Chill in the fridge, garnish with olive oil and shredded basil.
