Smoky Guacamole
(2 ½ cups)

•                    2 avocado (ripe), halved, pitted, and flesh scooped from skin

•                    ¾ cup plain greek yogurt

•                    1-2 tablespoons lime juice (start with 1 and add more if needed after tasting)

•                    ½ tsp finely chopped chipotle chile en adobo , plus 1 teaspoon of adobo sauce (up to 1 ½ if you like things spicy!!!)

•                    Salt and pepper to taste

•                    Optional ingredient: ½ cup fresh cilantro leaves  finely minced

In a bowl mash avocado, greek yogurt, lime juice, cilantro leaves (if using), and chipotle chile until as smooth as you’d like. Stir in scallions.  Season to taste with salt and pepper. Enjoy immediately or cover with plastic wrap directly touching guacamole and chill until flavors meld, about 1 hour. (Dip can be covered like this and refrigerated for up to 2 days.)
