Chocolate Icebox Cake

Ingredients:

3 cups heavy cream

5 tablespoons sugar (divided)

8 oz cream cheese, softened

1 tablespoon vanilla extract

2 packages of chocolate wafer cookies 

Chocolate for shaving

Directions:
In a large bowl, beat cream and 3 tablespoons sugar with an electric mixer on high speed until you have stiff peaks.  In a separate bowl, beat cream cheese, 2 tablespoons of sugar and vanilla extract until well combined.  Fold the whipped cream into the cream cheese mixture.

On a flat serving plate, arrange a single layer of cookies, keeping one in the center.  Top with whipped cream mixture.  Alternate ingredients until you have your cake, approximately 8 to 10 layers. It is best refrigerated overnight.

To serve, top with chocolate shavings.
