Waffle Iron Hash browns
• 2-3 potatoes, peeled and shredded (or frozen shredded, thawed) • 1 med. onion, grated • 1 egg, beaten Salt and pepper • 2 Tbsp. butter Heat waffle iron to the highest setting.
Place shredded potatoes on a clean kitchen towel and wrap together so that the towel can be squeezed to eliminate all moisture. In a bowl, combine the potatoes, grated onion with juice, beaten egg. Season with salt and pepper.
Carefully brush the butter onto the waffle iron and then place the seasoned potatoes onto the hot plate. Brush the top plate of the waffle iron with butter and close. Let cook for about 12 minutes or until crispy and brown. Warning: Do not try and open the iron before 10 minutes time or you will have a big mess.
