Quick and Easy Breakfast Sandwich
• 1 egg
• 1 slice of cheese
• 1 slice bacon (optional)
• 1 English muffin
Crack egg into a microMwave safe ramekin, small bowl or coffee mug. Cover tightly w plastic wrap. Microwave for 30 seconds or until egg begins to make noise. Remove from microwave, but keep it covered. Microwave bacon on a paper towel for 1-2 minutes or until desired crispness. Toast English muffin. Place slice of cheese on the bottom piece of the HOT muffin. Remove plastic wrap from the egg ramekin/bowl/mug and run a butter knife around the edges of the egg to help release it. Carefully slide egg on top of cheese. Top w bacon if desired and then w the other half of the muffin. Wrap tightly in foil for a hot breakfast on the go!
