Grilled Asparagus with Prosciutto

1 lb. fresh asparagus
2 pkgs. thinly sliced prosciutto
Lemon Vinaigrette (recipe below)
Extra virgin olive oil
Salt and pepper
Sprinkle asparagus lightly with evoo and salt and pepper. Using an electric grill, grill the asparagus until just tender but still bright green in color. Let the asparagus get cool enough to handle then wrap each stalk with a slice of prosciutto. Place side by side on a large platter and drizzle with lemon vinaigrette. Serve at room temperature. 1/2 cup extra virgin olive oil
1/4 cup lemon juice
1/4 cup white wine vinegar
2 Tbsp. honey
Salt and pepper to taste
Combine all ingredients in a small glass jar that has a lid or bowl.
