FAIRWAY, KS (KCTV) - Salmon Cakes -

2 6-ounce cans skinless and boneless salmon, drained

1/2 cup each onion, red pepper, celery finely diced

2 tablespoons fresh parsley, chopped

1 teaspoon garlic powder

1 tablespoon Dijon mustard

1/2 teaspoon ground black pepper

1/2 cup panko bread crumbs

2 eggs or egg whites, lightly beaten

Olive oil spray

Preheat oven to 400 degrees and mist a baking sheet with spray oil.  In a medium bowl, flake the salmon, adding all remaining ingredients.  Mix well.  Divide the mixture into 8 equal parts (about 3/4 cup each) and shape into 8 3-inch thick cakes.  Place onto baking sheet, and bake for 8-10 minutes per side, until golden brown.

Delicious and affordable served along side canned green beans and smoked gouda grits. (2 cups water, 1 cup 1% milk, 1 cup quick-cooking grits, 1/4 teaspoon coarse salt, 1 cup smoked Gouda cheese, shredded - about 4 ounces) and 1/2 teaspoon garlic powder.
