Cashew Sour Cream Makes: 1 ¼ Cups AMT INGREDIENTS 1 Cup Raw Cashews 2 Teaspoons Cider Vinegar 1 Teaspoon Lemon Juice 1/8 Teaspoon Salt Instructions: 1. Place cashews in a cup or small bowl and cover with boiling water. Let soak for 30 minutes. 2. Drain cashews and place in a blender with vinegar, lemon, salt and about ¼ cup of water. Blend until very smooth, adding more water as required to puree the mixture.
