Beef Stroganoff Makes: 1 ¼ Cups INGREDIENTS 1/8 cup dry mustard powder 1 1/2 tsp salt 1 1/2 tsp hot water 1/2 cup ghee 1/2 lb onions, julienne 1 lb mushrooms, sliced 1/2 cup dry white wine 1 1/2 lb beef, julienned tt salt & pepper 3/4 cups paleo sour cream, warm Instructions: 1. Sauté onions in ghee and season with salt & pepper. Remove from heat. 2. Sauté mushrooms in ghee and season with salt & pepper. Remove from heat. 3. Season beef with salt & pepper and sear in ghee, do in batches so meet does not get overcrowded. 4. Once all beef is seared, deglaze pan with white wine and hot water and dry mustard to pan. Be sure to scrape all the bits off the bottom of the pan. 5. Bring mixture to boil, then add the onions, mushrooms & beef back to the pan. 6. Finish cooking the beef in this mixture, once cooked take off of heat. Slowly add in paleo sour cream and continuously stir until well incorporated.
