Firehouse Chicken Enchiladas

Chicken Enchiladas

1 whole chicken fryer
3 cubes of chicken bouillon
1tsp of oregano
1 tsp garlic powder
Boil chicken for an hour
Let it cool then discard skin and debone chicken

Enchilada sauce:
8 to 10 dried California chiles
1 clove garlic
Cumin to taste
Seasoning salt to taste
Blend then strain

1 28 oz can of whole peeled tomatoes
1 clove of garlic
1/2 of an onion
1/2 of a bunch of cilantro
2 jalapeƱos
Salt to taste

3 cans (16 oz.) pinto beans
1 9 oz. roll of beef chorizo sausage
2 cloves of garlic
1/2 of an onion
1 jalapeƱo
