FAIRWAY, KS (KCTV) -  Mac & Cheese – Cajun Style

16oz Macaroni

1lb Andouille Sausage (ground bulk or links cut into small chunks)

2 TB Flour

2 Cups Heavy Whipping Cream

3 Cups Shredded Cheddar Cheese

2 TB Cajun Seasoning

2 Green Onions, sliced

1 Cup Crushed Jalapeno flavored Kettle Chips (or Zaps chips if you can find them)

Cook sausage in a skillet until cooked through.  Remove sausage from pan and set aside.  Save 2 tablespoons of grease in pan.  If there is not enough liquid grease, add some olive oil. 

Cook Macaroni according to package instructions.

While Macaroni is boiling, make a roux in the skillet by adding the flour to the fat in the skillet on low heat and cook for 2-3 minutes until it is light brown in color.  Carefully whisk in the cream along with the Cajun Seasoning and allow to thicken slightly.  Add two cups cheese and whisk until melted continuing until it reaches a thick and smooth consistency, approximately 4-5 more minutes.

Drain pasta and add cheese sauce and meat to the hot macaroni.  Toss the pasta to ensure the cheese sauce covers well.  Pour into 9x13 baking dish and top with cheese and crushed jalapeno chips.  Bake in 350 degree oven for 20-25 minutes or until cheese is bubbly and topping slightly browned. 

Garnish the pasta with the sliced Green Onions and additional crushed Kettle Chips if desired.
