Tortellini Soup

1 package celery
1 package carrots
1 onion
1/4 cup vegetable oil
1- 28oz can stewed tomatoes
5 cloves of garlic minced
12 cups water
2lbs  bulk Italian sausage(no caseing) Scimeca's
1 tablespoon garlic powder
1 tbs onion powder
1 tsp black pepper
1 tsp crushed red pepper
1 tsp salt
1/2 tablespoon dried oregano
1 heaping table spoon better than bouillon chicken base.
1 heaping table spoon better than bouillon beef base.
24oz frozen 4 cheese tortellini (Louisa brand)

chop celery, carrots, into 1/2 inch pieces
chop onion into medium dice
mince garlic

Add all above items to large stock pot and sauté in 1/4 cup oil until onions are light gold in color

Add bulk Italian sausage ( I like to use local sausage from scimeca's ) and brown all the sausage, break up as you cook into small pieces, once browned add water and all other ingredients except tortellini.  Bring to a boil and lower to a medium boil and cook for 45 minutes until veggies are tender.  Add tortellini  and cook according to directions on package.

Serve with a good crusty bread and grated Romano cheese for a little sprinkle in your soup.
