Baked Goat Cheese Dip

FAIRWAY, KS (KCTV) -  Baked Goat Cheese Dip

·         1 10-oz. log of goat cheese, room temperature

·         4 oz. cream cheese, room temperature

·         1/4 c. Parmesan cheese

·         1/4 c. extra virgin olive oil , plus more for brushing, divided

·         freshly ground black pepper

·         8 small cherry or grape tomatoes, quartered

·         2 Tbsp. chopped fresh chives

·         2 Tsp. balsamic vinegar

·         1 clove garlic, finely chopped

·         kosher salt

·         toasted baguette

Preheat oven to 400 degrees.

Brush a 1 qt. baking dish with extra virgin olive oil.

Combine all of the cheeses and 2 Tbsp. of the extra virgin olive oil into the bowl of a food processor and season with pepper. Puree until smooth. Spread the cheese mixture in the baking dish mounding it more around the edges than in the middle. Bake until golden and bubbly, around 15 minutes.

While the cheese is baking, toss the tomatoes, 2 Tbsp. of extra virgin olive oil, chives, vinegar and 1/2 tsp. salt in a medium bowl. Spoon the tomato mixture over the top of the dip.

Serve with toasted baguette slices.
