SMOKED CHERRY RYE SYRUP

Yield:

1 1/2 quarts

 

3 quarts

 

Ingredients:

   

 

   

dried cherries

2 Cup

 

 

4 Cups

 

smoked water

4 Cups

 

 

8 Cups

 

corn syrup

1/2 Cup

 

 

1 Cup

 

rye

1/2 Cup

 

 

1 Cup

 

sugar

1 Cup

 

 

2 Cup

 

 

Method:

             

1. Smoke dried cherries in smoker for 20min. Either Cold Smoke or Hot Smoke is acceptable.

2. Add all ingredients in a saucepan and bring to a boil.

     

3. Boil until sugar is dissolved and liquid starts to thicken. 10 minutes.

   

4. Blend with Immersion blender. Strain through chinois.

     

5. Place in containers and chill.

           

 

LEMON ROSEMARY BUTTER

Yield:

      1 1/2 quarts

         3 quarts

 

Ingredients:

butter(rm temp) 2 lbs      4lbs
lemons(zest) 2 ea     4ea
fresh rosemary 2 T   4T
salt 2 t   4t
Method:          
1. Finely chop rosemary. Zest Lemons.        
2. Whip All ingredients in Kitchenaid mixer with paddle attachment.
3. Store in appropriate container. Keep at room temperature.
