MEATBALL SKEWERS (meatball sub on a stick)

Looking for a delicious way to enjoy the subway sandwich,without having to eat too many carbs? This is the perfect alternative and Dad will LOVE it... guaranteed!

 

Ingredients:

  • 1 Red Pepper (optional)
  • 1 Green Pepper (optional)
  • Refrigerated garlic breadsticks
  • Meatballs (beef or turkey) (homemade or ready-made)Mozzarella cheese Wooden Skewers

 

Make your homemade meatballs or heat up the ready-made ones.  Cut up the peppers.  Unwrap the breadstick dough and separate them.  Preheat oven to 350 degrees.  In the meantime, pierce the end of a breadstick dough on the skewer, follow with three meatballs separating each one with two slices of peppers.  Then wrap the breadstick around the meatballs and peppers in a circular pattern, securing the end by piercing it on the skewer.  Line the skewers on a greased pan.

Place in the oven and bake at 350 degrees for approximately 10 minutes.

Once the breadsticks are baked, remove from oven and immediately sprinkle the entire skewer with mozzarella cheese.  Serve with marinara sauce and enjoy!

 

WATERMELON BBQ

Tired of the same old buffet set-up?  Add a little pizzazz with this wonderful and easy to create watermelon BBQ grill. This is such a great addition to a buffet or a centerpiece.  Perfect for Father's Day!!

Ingredients:

  • 1 Whole watermelon (small)
  • 1 box blackberries
  • 4 celery sticks
  • wooden skewers
  • Various fruit for skewers

 

Cut the watermelon in half, the "base" and the"lid" but make the "lid" portion slightly smaller than the base portion. Scoop out the watermelon from the base and lid.  Take the wooden skewers and pierce them through the top of the body about an inch apart, creating the look of the grill.  Create holes at the bottom of the BBQ base. Two on top and two on bottom. Others have made three holes, I found that my BBQ base was unstable, so I made four holes for better stability.  Cut four celerysticks and place them inside the holes.  Stand the base and make sure it is table and can support a few fruit skewers. 

For the lid, secure it with a toothpick to the base,making the lid hang off the BBQ base, as if it is left open.  Place the entire BBQ on a tray, to collect any dripping juice.  Place fruit skewers around the BBQ and place some on top.  Perfect for a buffet or even as a centerpiece.

 

KIT KAT CAKE

  • Single layer store-bought cake or bake your own cake. 
  • 2 large bags of snack-sized Kit Kant bars.  These are full sized Kit Kats but will come in a package of two, instead of four. Do not buy the mini Kit Kats.
  • 1 large package of fresh strawberries
  • 1 pkg of fresh blackberries
  • 1/2 jar of jam, fruit preserves, or lemon curd

 

Take your store bought cake out of its package or make your home-made cake.

Make sure your cake is well iced or has plenty of frosting.  Open the Kit Kat packages and place the Kit Kats around the cake.  When the cake is fully surrounded with Kit Kats, tie a pretty ribbon around the Cake. 

Wash the strawberries and blackberries and pat them dry.  Place the strawberries on the cake and begin piling them to make a pretty presentation.  When the strawberries cover up the cake entirely,start placing the blackberries in some of the crevices left by the strawberries.

Put the 1/2 jar of fruit preserves in a microwave safe bowl and add 1/4 cup of water.  Microwave for about 60 seconds or until the entire mixture is liquefied.  Mix the water and preserves to make a nice smooth mixture.  Take a brush, and dip it into the preserves soaking it fully. Start brushing the strawberries and blackberries with the preserves, giving them a beautiful shine.  Continue brushing them until they are glistening and fully covered.
