Pickled Sweet Corn & Pickled Shallots

Pickled Sweet Corn

Ingredients:
1/3 Cup water
1T sugar
1T mustard seeds
½ T salt
2 ½ T grown black pepper
1 ¾ Cup apple cider vinegar
3 ½ C sweet corn kernels
1/3 Cup minced shallot
½ T minced garlic

Method:
1.Combine water, salt, mustard seed, sugar, black pepper, vinegar in small sauce pot and whisk to dissolve sugar/salt.
2. In a small non-reactive container combine, corn, shallot, garlic.
3. Bring pickling liquid to a boil.  Pour over the corn, shallot, garlic mix, and allow to cool at room temp for 1 hour.
4. Label, and store properly in cooler overnight.  Enjoy the next day!!

Pickled Shallot

Ingredients:
2 Cups shallot petals
¾ Cup rice wine vinegar
¼ Cup water
¼ Cup sugar
1 T kosher salt

Method:
1.Combine water, salt, sugar, rice wine vinegar in small sauce pot and whisk to dissolve sugar/salt.
2. Bring to a boil.  Pour over shallot petals cover and refrigerate.
3. Pickles will be ready in 4-6 hours.
