Flourless Chocolate Cake and Cherry Ganache

Flourless Chocolate Cake
1 C water
1/4 tsp salt
1 C sugar
36 oz chocolate chips
1 lb butter
In microwave, melt chocolate together with butter. Mix to combine.
Separately, combine water, sugar and salt. Heat in microwave to dissolve.
In stand mixer, slowly add sugar water to chocolate mixer until well combined.
Scrape bowl. Add in eggs one at a time, mixing well after each addition.
Grease a shallow hotel pan and line with parchment (bottom only).
Pour cake mix into pan and allow to settle 10 minutes.
Bake at 300 degrees set over a pan of water 20-25 minutes until set.
Chill completely before portioning. Makes 12 4x3 rectangles.
Yield: 1.5 quarts
1 C cherries
1 lime zested
4 1/2 oz white chocolate
2 tbsp butter
1/4 corn syrup
1/4 heavy cream
3/4 tsp salt
Melt white chocolate and butter in microwave. Stir every 30 seconds until chocolate is melted. Add everything but the heavy cream, stir well and microwave for 30 seconds. Remove from the microwave and blend with stick blender. Slowly drizzle in the heavy cream and blend until homogenous. Strain through chinoise. Cool completely.
