Baked Mac-N-Cheese with Bacon (shhhh…and Spinach!)

1 box high fiber or whole grain elbow macaroni
1 oz container of low-fat cottage cheese
4 oz low fat sharp cheddar
1 TBS butter
1 TBS flour
¾ cup milk
1 package of center cut bacon
1 bag of frozen spinach
Salt/pepper to taste
1-2 cups of breadcrumbs (dried)
Prepare the noodles per instructions on box. Boil and drain. Set aside.
Defrost spinach per instructions on bag. Drain all excess water. Set aside.
Prepare bacon per instructions. Roughly chop. Set aside.
Melt butter in a pan. Add flour to create a roux, then milk all at once and bring to a boil to create a basic white sauce. Add cheddar cheese and stir until incorporated. Remove from heat. Stir in cottage cheese, salt and pepper to taste.
In 1 large, greased casserole dish, layer the noodles, sauce, some spinach and bacon. Repeat. Top with breadcrumbs. Bake at 350 degrees for 30-40 minutes.
