4 egg whites
1 package of center cut bacon
1 package of whole grain English muffins
8 slides of low-fat cheese: any flavor
Beat together the eggs and egg whites. Pour into a large medium-hot pan, coated with cooking spray or butter. Cook the eggs uniformly to create what looks like an omelet, but do not fold over. Cook the bacon per package directions.
Assembly: Cut the egg into 8 ‘squares'. Top with 2-3 pieces of ripped bacon and a slide of cheese. Wrap in waxed paper. Repeat. Freeze them and just pop in the microwave each morning for breakfast.
