KANSAS CITY, MO (KCTV) -

One of the biggest New Year's Eve parties is at the Kauffman Center for Performing Arts.

All the stages are going to light up the night with live musical performances, aerobatics and dance.

The performing arts center in downtown Kansas City will cater to upwards of 3,000 people for Eve 2013. And with endless mouths to feed, the kitchen hasn't had any time to cool off.

Cooks have been busy since last week to prepare. The heat is on in chef Philippe Lechevin's kitchen.

"So far, we've been on target," he said.

Cooking for a party of nearly 3,000 isn't easy.  There is something for all palates and diets, from tacos and pizza to the gourmet.

The head chef at the Kauffman Center for Performing Arts created a menu for Eve 2013 true to his Parisian roots - not skimping on flavor or glamour.

"We're going to have a croq monsiere station, which is a twist on a French pannini ... braised short ribs and cheese sauce," he said.

And the oyster bar is sure to be a centerpiece

"Just the way it looks will stand alone, because it will be on a 7-by-8 foot ice carved station,  totally made of ice. One side will be oyster and shrimp, the other side will be handmade sushi," he said.

Then there will be a nitrogen station, something Lechevin says will be the night's showstopper.

"We're going to have a huge tank of nitrogen, and we're going to pour liquid nitrogen in a bowl and people wearing a hazmat suit and they will dip pieces of fruit, candy, brownie bites into the liquid nitrogen, and then into a hot liquid ganache. So you're going to have a frozen sweet with like chocolate around it," he said.
