Tangled Pepper and Roasted Tomato Crostini with Herbed Goat Cheese

8 oz goat cheese
3 T fresh herbs (fresh thyme is our favorite at delish!)
Cherry tomatoes, oven roasted & quartered
Multicolored bell peppers, blistered & julienned
Garlic-infused extra virgin olive oil
Aged balsamic vinegar
Salt & pepper to taste
Slice baguette, brush with garlic-infused olive oil, season with salt and pepper, toast in oven. Whip together goat cheese, fresh herbs, salt and pepper. Toss the prepared tomatoes and bell peppers in a sprinkle of extra virgin olive oil and aged balsamic vinegar. Smear goat cheese onto the crostini, and arrange roasted tomatoes and peppers on top. Enjoy!
