Blue Bell Ice Cream celebrates National Ice Cream Month with delicious recipes

Blue Bell Ice Cream is talking about National Ice Cream Month and their Week of Free Ice Cream.

Below are some delicious recipes featuring the tasty cold treat of Blue Bell Ice Cream.

Rockslide Brownie Parfait

3 small scoops Blue Bell Rockslide Brownie Ice Cream (approximately ¼ to 1/3 cup each)
½ of a small banana, sliced into ¼-inch thick rings (about six rings)
purchased caramel ice cream topping
frozen whipped topping, thawed
chocolate shavings from your favorite chocolate candy bar

Place one scoop of ice cream in a chilled parfait glass. Top with 3 slices of banana and drizzle with caramel topping. Repeat layers. Add another scoop of ice cream to the glass. Top with a dollop of whipped topping and sprinkle with chocolate shavings. Serve immediately. Makes one parfait.

4th of July Brownies

1 package brownie mix (to fill an 8-inch x 8-inch pan)
8 scoops Blue Bell Rockslide Brownie Ice Cream (approximately ½ cup each)
1 cup purchased fudge sauce
1 cup frozen whipped topping, thawed
4 t. red, white and blue star sprinkles (or more if desired)

Bake brownies as directed on package. Cool. Cut brownies into eight 2-inch by 2-inch squares. Heat fudge sauce according to manufacturer's instructions. Place one brownie square on a dessert dish (use red, white or blue plates if possible). Top with a scoop of ice cream. Cover the ice cream with 2 tablespoons of heated fudge sauce. Add a dollop of whipped topping and sprinkle the topping with approximately ½ teaspoon star sprinkles. Repeat for each dessert. Serve immediately. Makes eight servings.

Rockslide Brownie S'Mores

2 graham cracker squares
1 to 2 t. chocolate dessert topping
1 scoop Blue Bell Rockslide Brownie Ice Cream (approximately 1/3 cup)

Drizzle dessert topping on one side of a graham cracker square. Place ice cream on top of sauce. Top with second graham cracker square and press down gently to adhere the crackers to the ice cream. Serve immediately. Make one serving.

Note: The above dessert can be eaten without utensils. To make it a little fancier, serve it "open-faced" by omitting the second graham square. Serve it in a small dessert dish and top the ice cream with a dollop of whipped topping, some crushed graham cracker pieces and more dessert topping.

Rockslide Brownie Pie

18 chocolate wafer cookies, crushed¼ c. butter, melted
1 c. chocolate fudge topping
6 cups Blue Bell Rockslide Brownie Ice Cream, slightly softened
½ c. caramel sauce
½ c. chopped roasted nuts
Chocolate shavings, optional
Frozen whipped topping, thawed

Mix cookie crumbs and butter in a small bowl until well combined. Press crumbs into a 9-inch-diameter pie dish. Freeze until cold, about 20 minutes. Spread chocolate sauce evenly over bottom of crust. Freeze for 20 minutes. Spoon ice cream over sauce. Smooth top. Freeze for 4 to 24 hours. Remove dessert from freezer 10 minutes before serving. Drizzle caramel sauce over ice cream. Sprinkle with nuts and chocolate shavings. Cut into 8 to 10 wedges and serve immediately on chilled dessert plates with dollops of whipped topping. Makes 8 – 10 servings.

Note: Instead of making the crust (first two ingredients listed), you can purchase a ready-to-fill chocolate cookie crust.

Rockslide Brownie Delight

1 pkg. devil's food or dark chocolate cake mix
¾ c. ready-to-spread chocolate fudge frosting
¾ c. water
¼ c. oil
1 ½ qts. Blue Bell Rockslide Brownie Ice Cream

Preheat oven to 350°F. Generously grease bottom, sides and rims of two 9-inch pie pans or round cake pans. In large bowl, blend first four ingredients at low speed until moistened. Beat two minutes at high speed. Spread half of batter in bottom of each pan. Do not spread up the sides of pan. Bake for 25 to 30 minutes. Do not overbake. Cakes will collapse to form shells. Cool completely. Cover and freeze for 30 minutes. Remove shells from freezer, unwrap and fill with scoops of ice cream using half the ice cream for each pie. Cover and freeze for 2 to 24 hours. Remove from freezer 10 minutes before serving. Cut dessert into wedges and serve. Makes 12 – 16 servings.

Note: If desired, heat any remaining frosting just until softened and drop by spoonsful on top of wedges.

Blue Bell Ice Cream will celebrate National Ice Cream Month (NICM) in July with a special weeklong giveaway celebration honoring the frozen deliciousness. Blue Bell's Week of Free Ice Cream starts Saturday, July 13, at The National Agricultural Hall of Fame and ends Saturday, July 20, at Swope Park's annual Party in the Park family celebration.

During Blue Bell's Week of Free Ice Cream the community is invited to sample the company's the newest creation, Rockslide Brownie Ice Cream. Rockslide Brownie is a luscious dark chocolate ice cream combined with chocolate brownies, miniature marshmallows, chopped almonds, pecans and walnuts, all surrounded by a rich caramel sauce swirl.

Tractor Daze & Touch-A-Truck is an all day outdoor event hosted by the National Agricultural Hall of Fame in Kansas City, Kan. The Blue Bell team will hand dip its special National Ice Cream Month flavor, Rockslide Brownie, from the sampling truck between 10 a.m. and 4 p.m. inside the event area.

It's one of Kansas City's most well-known chef's birthdays! To celebrate Jasper's birthday, the Blue Bell Ice Cream truck will offer free ice cream to all of Jasper's customers in the parking lot of his restaurant from 11 a.m. to 1:30 p.m.
