Strawberry Arugula Salad with Ginger Honey Vinaigrette

Strawberry Arugula Salad with Ginger Honey Vinaigrette

Vinaigrette:
3 cloves garlic, minced
2 Tbl fresh ginger, minced
1/3 cup unseasoned rice wine vinegar
1/4 cup soy sauce
3 Tbl honey
1/3 cup fresh squeezed orange juice
1/2 cup extra virgin olive oil, divided
1/8 cup sesame oil

1/8 cup Missouri black walnut oil

1/4 cup slivered green onion

Method:
Soften on low heat garlic and ginger in a tablespoon of olive oil (do not let brown)
Add rice wine vinegar, soy, and honey
Heat until honey is dissolved
Remove to a blender or food processor
Drizzle in sesame oil, black walnut oil,  and remaining olive oil
Remove to a jar, add slivered green onion
Can be served warm or cold

Salad:
Arugula
Strawberries
Fresh Ricotta
Pecans

Method:
Toss arugula with vinaigrette in a mixing bowl to taste
Plate with a scattering of strawberries, ricotta, and pecans
