Fish en Papillote

2 salmon fillets

2 tea olive oil

½ lemon

1 carrot, shredded

1 zucchini, shredded 

Salt and pepper to taste

Warm the oven to 400 degrees. Cut roughly  18 inch x 12 inch squares of parchment. Fold the parchment in half, then open again, causing a crease in the middle. Mound shredded carrots and zucchini on one half of the parchment. Sprinkle with salt and pepper. Additionally, sprinkle the fish with salt and pepper and then lay fish on top of veggies. Drizzle 1 tea of olive oil on top of each piece of fish. Squeeze lemon over the top. Seal the parchment by folding the empty side over the top and folding the edges, creating a half-moon shape. Place on cookie sheet and in oven for 10 minutes. Serve in parchment on plates, and cut open with kitchen shears.
