Simple Chicken Parmesan
2 split chicken breasts (skinless/bonesless)
2 eggs, beaten
½ cup of flour
½ cup of grated parmesan cheese
¼ cup of vegetable oil
Salt and pepper to taste
Bring vegetable oil to a medium-high heat. While pan and oil are warming up, pound chicken breasts between parchment or saran wrap until even and flat. Salt and pepper both sides. Dip in eggs, dredge in flour/parmesan mix. Pan fry roughly for roughly 4-5 minutes on each side. Serve hot.
