Maple Braised Pork

Yield: 1 quart          
3 lbs pork shoulder, deboned and cut in to large pieces    
1 cup veal stock          
1/3 cup bourbon          
1/3 cup orange juice          
I tsp. orange zest           
1 tsp. lime zest          
1/3 cup maple syrup          
1/4 cup oil           
3 sprigs oregano          
1/2 cup cilantro          
1 Tbsp. minced garlic          
1 Tbsp. ground cumin          
2 Tbsp salt          
1 Tbsp. black pepper          
1. Season pork with salt, pepper and cumin.  Heat oil in a hot skillet and sear pork.
2. Add bourbon to deglaze and transfer pork to a deep baking pan.    
3. Add remaining ingredients.  Cover tighly with foil.      
4. Bake at 350 for 3 hours or until tender.        
5. Allow pork to cool in it's braising liquid.  When it is cool, shred pork and add in 1 cup of 
the strained braising liquid.  Discard remaining ingredients
