A chef at La Bodega shows viewers how to make their Paella Valenciana.
1 oz olive oil
1 oz Bilbao chorizo
2 oz chicken breast
2 oz pork loin
1 oz minced garlic
1 cup arborio rice
2 oz white wine
2 cups chicken stock
1 pinch saffron
2 oz Spanish onion
2 oz red bell pepper
2 oz green beans
2 black tiger shrimp 16-20 count
1/4 tsp turmeric
1/4 tsp paprika
sea salt & pepper to taste
1 lemon crown
1 tsp chopped parsley
First heat the stock in a small pot and add the saffron to bloom for ten minutes.
Next in a warm paella pan add the oil and then the chorizo and saute for a few minutes. Next mix in the rest of the meats and saute until all sides of the meat are seared. Then add the peppers, onions, garlic and cook for a few minutes. Then add your seasonings and the rice to begin toasting for a couple of minutes.
Next deglaze the pan with the wine and start adding in the stock a ladle at a time. This is when you need to adjust the heat to low, once the stock has been added you toss in the green beans.
Allow the paella to simmer for the next 20 minutes then add in the seafood and place in the oven at 350 degrees for 8 to 10 minutes.
After you pull it from the oven garnish with the parsley and lemon and enjoy!
