Mike's Diet Chicken

Ingredients:
1 (6-8 oz.) boneless, skinless chicken breast
6 peeled and deveined shrimp (16-20 ct.)
1 8 oz. can crushed San Marsano tomatoes
2 cloves garlic, peeled and finely chopped
3 leaves fresh basil, rolled together and thinly sliced
8 oz. chicken stock
2 cups fresh spinach
Pinch of red pepper flakes
Coarse salt and pepper (to taste)
Directions:
Grill chicken breast on each side for about 5 minutes, or until the juice runs clear. While the chicken is cooking, in a large skillet, cook the tomatoes, garlic, salt and pepper, and red pepper flakes over medium heat for about 5 minutes. Add the chicken stock, and simmer until the mixture reduces by half. Add the shrimp and cook for another 3-5 minutes, or until the shrimp are pink and begin to curl. Add the spinach and mix until leaves are cooked down. Finish by pouring the mixture over the chicken breast.
