Diamond Bowl will be hosting a Super Bowling event on Sunday, which allows people to come watch the big game on one of their nine big screens while they bowl.
One appetizer they will feature on Sunday is their sweet potato nachos.
Boil whole peeled sweet potatoes for four to five minutes, remove from water and cut into cubes.
Put butter in a hot pan and fry the cubes until they are golden brown.
Top sweet potato bites with cheese, bacon, green onions and a special sauce that consists of mayonnaise, sour cream, a little Dijon mustard, horse radish and garlic.
Recipe for the sauce:
2 cups mayonnaise
1 1/2 tablespoons prepared horseradish
2 tablespoons ketchup
2 tablespoons spicy brown mustard (Creole)
1 tablespoon freshly chopped parsley
1 tablespoon fresh lemon juice
1 1/2 teaspoons Worcestershire sauce
1 teaspoon Tabasco sauce
1 teaspoon Cajun seasoning
1 teaspoon sweet Hungarian paprika
2 finely minced garlic cloves
Directions for sauce:
Thoroughly mix all ingredients, and enjoy. This dipping sauce is especially good with seafood, sweet potato fries, or onion blossoms. It is also good on a patty melt.
