Southern Corn Bread



1 cup yellow corn meal (stone ground, medium grind)

1 cup flour

1 teas baking powder

1 teas baking soda

¾ teas salt

1/2 cup sugar

1 1/4 cups buttermilk (room temperature)

1/2 cup melted butter (let stand until melted butter returns to room temperature)

2 eggs (room temperature)



Preheat oven to 400 degrees

Grease cast iron skillet (vegetable shortening) and place in hot oven

Mix first 5 ingredients in a large mixing bowl

Make a well and stir wet ingredients in the well before incorporating into dry mixture (don't over mix – a few lumps are fine)

Let rest, until mixture takes on an "airy" texture, then pour into hot skillet

Bake 20 minutes, then begin testing, crust should be a golden brown
