Pumpkin Brule
Yield 4 mini pumpkins
1 ½ c Heavy cream
½ c whole milk
¼ t cinnamon
1/8 t nutmeg
1/8 t ground ginger
1/8 t cloves
Steep to almost boil and set aside the mixture
4 egg yolks
¼c pumpkin puree
1/3 c sugar
Whisk until pale in color
Pour cream/milk into sugar/egg mixture. Fill mini pumpkins
Bake mini pumpkins in a water bath at 300 degrees for 30-40 min
