Spaghetti  Squash


1 med  Spaghetti  Squash

-          Cut squash lengthwise, scoop out seeds

-          rub inside of squash with olive oil and salt and pepper

-          place squash skin side up on sheet tray

-          place in 350*F oven and roast until soft to the touch about 35-40 mins

-          allow to cool until touch

-          use fork and scrape the inside of the squash and the flesh will become stringy like "spaghetti"


Spaghetti Squash Provencal

1 each spaghetti squash, roasted and processed(see above)

2 each tomato, med dice

2 clove garlic, sliced

 1 med shallot, slice

1 ½oz white wine

2oz chicken stock

Chopped Basil

Lemon juice, splash

1oz Butter

Salt and pepper

1oz oil

  1. Heat oil in skillet
  2. Sweat shallot and garlic; then add tomato
  3. Deglaze with white wine, reduce by half; add chicken stock and butter
  4. Add spaghetti squash
  5. Season with salt, pepper, lemon juice to taste
  6. Add basil; toss and serve
