Lauren Martin shared her recipe for pan seared salman with us! Here is how you make it!

Pan Seared Salmon

      Heirloom tomato panzanella, avocado, red onion, champagne mustard vinaigrette

 

Pan sear 8oz salmon, season with salt and pepper

In a bowl mix focaccia croutons, diced avocado, heirloom tomato, shaved red onion, and Champagne mustard vinaigrette

-Plating-: place bread salad in bowl, put seared salmon on top of salad, and drizzle with champagne mustard vinaigrette. ENJOY

 

Champagne Mustard Vinaigrette

Ingredients:

 

 

 

 

1 cup

whole grain mustard

 

 

1 cup

Dijon mustard

 

 

 

1 bottle

champagne

 

 

 

1 cup

orange juice

 

 

 

2 cups

oil blend

 

 

 

1 tsp.

lime pepper

 

 

 

 

 

 

 

 

 

 

 

 

 

Method:

 

 

 

 

  1. Place all ingredients with large mixing bowl, Except oil and whisk till all incorporated.
  2.  Slowly pour in oil, continue whisking till all oil is emulsified.

Focaccia Croutons

Ingredients:

1 loaf herbed focaccia bread, cut into 1-inch cubes (about 3 cups)*
4 Tbsp butter
2 cloves garlic, minced
Freshly ground pepper, to taste

Directions:

Melt the butter in a large skillet and add the bread cubes and garlic. Toast over moderate heat for about 5 minutes, stirring cubes often until golden on all sides. Remove from heat and set aside.
