Autumn Quinoa (single serve recipe)

  1. 1 teaspoon oil
  2. 1 tablespoon chopped yellow onion
  3. 1/2 cup roasted diced sweet potatoes
  4. 1/4 cup roasted fresh cranberries
  5. 1/2 cup roasted brussel sprouts
  6. 2 cups chopped fresh kale- stems removed
  7. dash vegetable stock
  8. 1 tablespoon chevre (goat cheese)
  9. 1 tablespoon toasted pecans
  10. drizzle of port wine, reduced to syrup

Step one: In a pan heat oil slightly, sautee onion and sweet potatoes

Step two: Add ingredients 3-5, sautee and season with salt and pepper

Step three: Deglase with dash of wine add kale and wilt

Step four: Add quinoa and dash vegetable stock, heat and check seasoning.

Step five: Garnish with ingredients 10-12, serve immediately
