3 Organic Eggs
1/4 cup half & half (or milk if preferred)
1/2 cup of cherry tomatoes
salt & pepper to taste
Whip eggs and cream in medium bowl, add salt and pepper.
Melt butter in small non-stick pan, add cherry tomatoes and sauté until soft.
Add egg mixture and cook over medium heat.
If desired, add favorite cheese and fresh basil.
Fold omelette over and serve.
