Bison Striploin Steak

Ingredients:
- 6 oz. Bison Striploin Steak
- 6 oz. Braised Bison Short Rib
- 2 oz. Lingonberry Jus
- 4 oz. mashed yams
- 0.5 oz. bourbon
- 1 oz. butter
- Sear the steak from both sides until medium rare.
- Heat the short ribs in its own juices.
- Season the yams add bourbon and butter.
- Arrange all items nicely on plate.
- Garnish with fried yams and broccolini.
